Christmas Fruit Cake

2 sticks of butter
2 cups light brown sugar
3 cups flour
4 eggs
½ teaspoon salt
½ teaspoon soda
1 teaspoon cinnamon
1 teaspoon Cloves
1 teaspoon nutmeg
3 tablespoons milk
4 ounces candied cherries
6 cups pecans
1 pound candied pineapple (see note below)
1 pound diced dates
2/3 cup cooking sherry

Allow butter to soften and mix with sugar and eggs. Chop pineapples, cherries, dates and nuts fine (1/8”). Best to buy already chopped up fruit and nuts! Mix dry ingredients and add to butter, sugar and egg mixture, add milk and sherry and then pineapple, cherries, dates and nuts. Bake in small tea cake size muffin pans for 20 minutes at 350 degrees.

Note: One year I could not get candied pineapples, I used a mixture of the orange, lemon and pineapples candied and already chopped up. I think that it was better than the original recipe. I also buy the already chopped up and sugared dates.
