RITZ CRACKER MERINGUE PIE

4 egg whites
225 gr or 1 c. white sugar
5 ml or 1 tsp. baking powder
5 ml or 1 tsp. vanilla

20 Ritz crackers, crushed I use my food processor to get them very fine and throw in the pecans to make them go further
225 gr or 1 c. chopped pecans

Beat until stiff almost peaked (I add the baking powder into the sugar) and gradually add this mixture while whipping the egg whites.
When stiff, I fold in the cracker crumbs and the pecans.
Bake in well greased pie plate at 350 degrees for 20 minutes.


This is cheap and tastes really good

I just made one for this evening and I usually use 4 egg whites as I'm not great at separating them.

Kezza, keep the nut pieces a bit on the larger side as then it makes it more crunchy.
I made one for a friend last night and forgot to make smaller pieces of nuts, and it actually tasted better that way.
