Roasted chicken

Skin 1 large chicken (low fat diet)
1 yellow onion
1 white onion
2 heads garlic (peeled cloves)
1 green bell pepper
1 red bell pepper
1 twig rosemary
Fresh cracked black pepper
sea salt

1 large amount of rice feed four size servings.

Cut all the veggies in 3/4" cubes and stuff inside bird, leave garlic cloves whole, stand chicken upright on a very large sheet of foil. Place rosemary inside the chicken as well.
Pull the foil up and surround the chicken and twist the top to seal the chicken well so no juices flow out (place in 8X8 baking pan just in case)

Roast for 45 min at 350 or till chicken is completely cooked well.

Open and pour juice into a sauce pan and make a clear gravy with corn starch and water slurry. Remove rosemary and toss. Veggies served over the rice and gravy for covering veggies and rice.
Chicken should fall off bone as it is well done, but juicy and yummy. Salt and pepper to taste.

This sure is a different take on the cchicken and I am actually going to try it this week as I have a baking chicken ready to thaw tomorrow.


It looks like an excellent recicpe...
