Kezza's New York Cheese Cake

Kezza’s New York Cheesecake

2 cups graham cracker crumbs, fine
½ cup granulated sugar
½ cup melted butter
2-8oz packages cream cheese
5 eggs separated
1 teaspoon vanilla
2 tablespoons lemon juice
1 cup granulated sugar
2 cups sour cream

1. For crumb crust: In a bowl, with spoon thoroughly mix crumbs with ½ cup sugar, then with melted butter. 2. With crumb mixture, line side and bottom of spring form pan. (with bottom insert in place, lol). Refrigerate. 3. For filling: start heating oven to 350 degrees. In a large electric mixing bowl, with mixer at medium speed, or “cream” or with egg beater, beat soft cream cheese, egg yolks, vanilla, lemon juice, and 1 cup sugar until smooth. 4. Add sour cream and continue beating until well blended. 5. In small electric mixing bowl, beat egg whites until stiff; fold into cheese mixture. 6. Turn cheese mixture into crumb lined pan. Bake 1 hour; then turn off heat, and let stand in oven 1 hour longer. 7. Now cool cake in pan on wire rack, away from drafts 1 hour. 8. With spatula, loosen cake from sides of pan, then carefully remove cake, which is still resting on flat bottom insert. Let stand about 2 hours. Refrigerate. Optional; Pour cherry or blueberry pie filling over cake before serving.

A difficult recipe, but well worth it! ENJOY!
