Mexican Manicotti

1- 8 ounce Package Manicotti Shells
1 pound Ground Beef
16 ounce can Refried Beans
2 1/2 Cups Water
16 ounce Jar your favorite Salsa
2 1/2 teaspoons Chili Powder
1 teaspoon Cumin
1 teaspoon Mexican Oregano
1 teaspoon Adobo Seasonings
16 ounce Sour Cream
1 Container Guacamole (I make my own)
1 bunch Green Onions
1 Can Black Olives sliced
2 Cups Mexican Cheese
Jalepenos (optional)

Mix uncooked ground beef, refried beans and seasonings together and mix well. Stuff shells with meat mixture. Place in a 9 X 13 pan. Mix water and salsa together and pour over manicotti. Bake covered for 1 hour at 350 degrees.Uncover and spread sour cream, guacamole, cheese, green onions, black olives, and Jalapenos over shells. Bake an additional 10 - 15 minutes or until cheese is melted. Serve Hot

Sombrero Pie

1 Pound Ground Beef
1 16 ounce can Refried Beans
1 can dice Green Chilies
1 cup sharp cheddar cheese, grated
1 package taco seasonings
1 box Corn bread Mix
1 large can Mexi Corn

Spread refried beans on bottom of deep pie dish. Brown ground beef and drain. Add taco seasonings mix well and spread on top of beans. Next layer, cheese and then green chilies. Make corn bread according to box directions, substituting juice from mexi corn for water or milk, and then use water or milk to complete the amount required if necessary. Blend mexi corn into batter gently. Spread on pie and bake 25 degrees less than corn bread mix instructions.

Mexican Lasagna

1 1/2 pound Ground Beef
1 large package of the small corn tortillas (can use four)
1 large jar of your favorite salsa
1 can refried beans
1 package of taco seasonings
1 can sliced black olives
1 can tomatoes with green chilies
1 bunch of green onions diced
extra cumin and garlic to taste
1 large can mexi corn 2 eggs slightly beaten
16 ounce sour cream
1 bag of tortilla chips (i use corn)
3 cups Mexican Cheese

Cook ground beef and drain. Add refried beans, taco seasonings, mexi corn, tomatoes with green chilies, and extra cumin and garlic if wanted. Mix sour cream and eggs together in a separate bowl. In a 9 X 13 pan layer bottom with corn tortillas. Spread 1/3 of meat mixture on top of tortillas. Next layer 1/3 of salsa. Next layer is 1/3 of sour cream/egg mixture. Sprinkle 1/3 of green onions and black olives. Last layer is 1/3 cheese. Do this two more times until you have 3 layers off all. Top with crushed corn tortillas. Bake for 40 minutes or until heated throughout at 350 degrees.

Home Made Guacamole

3 or 4 avocado's mashed
1 medium onion diced
2 cloves fresh garlic cloves
2 Tomatoes diced
celery salt to taste
salt and pepper to taste
dash hot pepper sauce
1 teaspoon fresh lemon or lime juice
5 - 6 sliced jalapenos (fresh or pickled)
dash white vinegar
2 cups boiling water

Place diced onion and garlic in a strainer. Pour 2 cups boiling water over the onion and garlic to blanch. In a bowl crush garlic, add onion and all remaining ingredients and mix well. Chill and serve with favorite chips.

they all sound wonderful. I will try them all. love mexican food. :eat:
